    場外市場ど真ん中に位置する、築地No.1海鮮丼の呼び声高い寿司店。目玉の元祖こぼれウニ丼は、丼の上にびっしり敷き詰められた雲丹が評判。臭みや苦みの一切ない北海道産のむらさき雲丹は必食です。マグロは天然本鮪の中トロを使用。酢飯は酸味が強くなくちょうど良い味わい。丁寧でフレンドリーな接客も評判で、英語での対応可。

    Everyone knows that Tsujiki Fish Market is the center of the universe for the freshest offerings from the Pacific Ocean, but for die-hard fans of the golden gonads of sea urchin, Sushi Kuni is the real destination. Located in the outer Tsujiki market within a stone’s throw of the fish market, Sushi Kuni is an obsessive ode to uni and serves as a bucket list mecca for any self-respecting uni fan. Helmed by a salaryman from a long line of fishermen turned uni master, Sushi Kuni is a family operation with brother and sister working side by side as sushi chefs. The interior is unassuming and simple with a small sushi bar and four tables that stay packed all day.

    The specialty here is the overflowing Uni bowl, and true to its name there’s so much Uni that the challenge can seem daunting. And yet when you do finally uncover the bed of perfectly vinegared rice below, you go through a series of emotions: uni-filled bliss, sadness that there is no more uni and regret that you devoured the sweet and salty essence of the ocean so quickly. Luckily there’s plenty more to be had on the menu with various uni combination bowls ranging from nothing but uni to the kitchen sink seafood bowl with pretty much every offering from the sea stuffed into a rainbow of deliciousness.

    Of course given the proximity to Tsujiki, Sushi Kuni offers other seafood items such as a melt-in-your-mouth seared snapper and fresh shucked oysters the size of a very small head. But for uni aficionados , uni is the beginning, middle and end.

    築地場外入口すぐに位置する、4席のみの立ち食いカウンター寿司店で、大将はこの道65年以上の85歳(2023年現在)。シャリは粒感のある白シャリ。煮切りを塗って提供するなどネタは江戸前伝統の仕事ものが中心で、江戸食文化の立ち食いスタイルを体感することができます。マグロ希少部位3貫が人気で、頬肉・脳天・顎肉を味わうことができます。海外ゲストも多い。

    The chef choose what he will use for the day in the morning from the market. Get excited for over 40 years of craftsmanship.

    Draped by a couple of short noren curtains, you could be forgiven for walking past Sushi Okame and imagining that you had just spied a cheap drinking bar, before going on your way and thinking nothing of it.

    But this tiny standing-only establishment is a little gem of a working class sushi bar that protects the budget and doesn’t skimp on quality or flavour. They say it serves eight people but I’m not really sure where the other four spaces are to be had, but there you go, eight people. Right next to Lawsons convenience store at the Shin-Ohashi and Harumi Dori intersection, it’s literally up the road from Tsukiji Station.

    You can order a la carte or sets. A standard opening salvo for a set (tokusen) includes marinated tuna (zuke maguro), fatty tuna (chutoro), extra fatty tuna (otoro) and yellowtail (hamachi). One of the bar’s features is its well-considered bite-sized balance between rice (shari) and topping (neta). Do compliment the chef on the rice. It’s nice, not soft but certainly not hard, and goes surprisingly well with the textural toppings.

    Their sweet shrimp (amai ebi) is succulent, thick and gorgeously smooth to the palate. The salmon roe (ikura) and sea urchin (uni) ooze ocean smoothness. Shellfish items like arc shell (akagai) and clam are full of texture and taste. The shiny fish toppings like mackerel (saba) and gizzard shad (kohada) are simply delicious, to say nothing of the silky blanket-like conger eel (anago)… Sushi Okame is not elegant, refined or high class, but each time I visit, I leave the bar happy. Surrounded by the hustle and bustle of a thousand people going off to a thousand places, it’s a great little sushi experience that, quite literally, can only be found in Japan.

    GETTING THERE
    Head left from Exit 1 of Tsukiji station on the Tokyo Metro Hibiya line, then walk along Shin-Ohashi Dori (you’ll have Tsukiji Honganji Temple on your left) until you reach the main intersection with Harumi Dori. You’ll see the Lawsons convenience store across the road ahead of you, and Sushi Okame is right next door to it.

    名店「日本橋蠣殻町すぎた」の二番手だった大将が築地で独立した予約困難店。おまかせコースは「すぎた」同様握りを重視した構成で、一貫目にコハダを握るのも「すぎた」流。ネタは大き目、シャリは赤酢を2種ブレンドし酸味とコクのバランスを調整しています。早くも名物になりつつある煮ホタテはややレア気味で、ホタテの繊維を手で潰しています。小鰯など手間のかかる小魚にもきちんと仕事を施し美しい一貫に仕上げています。

    札幌の名店「和喜智」、今は無き名店「水谷」、銀座「太一」で修行した新進気鋭の大将の店で、ミシュラン一つ星獲得店。熟成や酢〆など過度ではなく、素材の持ち味を引き出すことに専念。特に評判なのがハマグリ、コハダ、サバなど、丁寧な下処理が必要とされるもので、旨味と酸味が強い赤酢のシャリと合わさり酸味・うま味・香りを楽しむことができる。小肌や車海老にはおぼろを挟み、穴子にあてる煮詰めは濃い。

    Chef Keita Aoyama opened this place in 2017, and a Michelin star soon followed. He’s a Hokkaido-born chef who mastered the Tokyo sushi style, and now enjoys a reputation as one of the best chefs in the Tsukiji area.

    He goes beyond great knife-work, even controlling the temperature at which each piece of sushi is served to best match the topping. The rice is seasoned with red vinegar in the original, historic style, with just a little salt.

    His full omakase course features around a half dozen appetizers and 16 nigiri! These move across the pescatarian color spectrum from red-fleshed fish to white.

    Be sure to book ahead to land a spot here. There are only 7 seats at the counter, and they’re in high demand. Equally so in the daytime, because the lunch service here is actually one of the best Michelin star dining deals in all of Tsukiji!
