スローモ。。。 Concentration Level: Saitō (Slow motion) _ Sushi Saitō is certainly one of the most difficult to make reservation sushi-yas in Tokyo. Having earned 3 star Michelin (one of 3 sushi-yas of Tokyo), Gold Tabelog award, highest score in Tabelog for sushi category for the entire Japan, highest ranking in Japanese-restaurant category in OAD, and earned the highest ranking for a sushi restaurant in 50 Best, it is not surprising that so many people want to try having a sushi experience here, especially with the man himself, Takashi Saitō. _ There are two counters here, one is served by chef Takashi, and the other one by Chef Shun. Dinner round at Sushi Saito at the main counter is the hardest to make reservation. For a new customer, making a reservation here at the second counter is seen possible through a certain hotel concierge, while the main counter is possible if you go along with a regular client. There are websites and services by individuals who can take you there at a premium. _ Takashi puts a lot of effort in perfecting each piece that he makes, as it can be felt by the way he conducts at counter. This include, but not limited to, frequent change of shari to maintain the temperature, the exactness of each piece that was cut, and the serving rhythm and pace. After making each piece, he would stare down each piece as if to absorb and see how he can make improvement in the next. I haven’t been to Sushi Saito enough time to see how it has changed over the years, but I did enjoy the experience I received here. Takashi’s English skills may only be conversant but he can communicate well through his smiles and laughters, especially after a few drinks. 🙂 _ There are currently two international branches by Sushi Saito. In Malaysia and in HK.
